Want a easy way to sneak super healthy quinoa into your families meals without them noticing? Well look no further here is the recipe for you :) My family goggled these badboys up. The best part is they are very easy to make. I do not measure out my seasonings (if you have viewed other recipes you know that already) please season to your own liking :)
Ingredients 1lb Ground Turkey 1 C uncooked Quinoa 1 Egg 1 whole Onion finely diced 2 C fresh spinach chopped 2 Tbsp minced Garlic 2 Tbsp Worcestershire Sauce Ground Ginger, Pepper, and Thyme (add to your liking) Preheat oven to 350 Cook quinoa as directed In a large bowl mixed ground turkey with all other ingredients. Once quinoa is cooked add it to meat mixture. I cover my baking pans with foil and then brushed them with Olive Oil. Whole mixture into small balls and put in pan until all mixture is used. Bake until Golden brown Appox. 40 to 60 minutes.
This recipe is so delicious serve over veggies as I did or do spaghetti and meatballs :)
Here is another great meatless Monday recipe. My family loves it! It is a great way if your trying to sneak veggies is for picky eaters of all ages ; )
Ingredients: *Two handfuls of fresh chopped kale *two handfuls of fresh chopped spinach
*15oz can of Butternut Squash
*2 cups shredded 4 Cheese Italian *1/2 cup fresh shaved Parmesan Cheese
*Two boxes of whole wheat pasta of your choice *Ricotta Cheese
Preheat oven to 375 degrees. Boil pasta as directed on box once done set aside. Put mushrooms and onions in a skillet on medium-high heat and cook until soft and all seasonings into skillet ( I do not measure out my seasonings sorry) add to your liking. Next add kale and spinach to skillet reduce heat to medium-low and place a lid on skillet let cook (stirring occasionally) for 3mins. while that is cooking in a large bowl mix butternut squash and ricotta cheese together. Then add half of the bag of 4 cheese italian and half of the parmesan to butternut/ricotta cheese mixture. In a very large casserole dish or baking pan add olive oil. Spread it around pan, then add pasta, mushroom/onion mixture, and lastly the cheese mixture. Mix it all together in large pan spread it evenly out in pan. Then sprinkle the remainder cheeses on top. Cover with foil and bake in oven for about 1 hour or until it is bubbly and a little golden at the top.

Ingredients *1 1/2 cups Old Fashioned Oats *1 Honeycrisp Apple *1/4 cup Brown Sugar *1/4 cup Fresh Blueberries *1 Tsp Ground Cinnamon *1/2 cup 1% Milk
Crop apple into cube size pieces leave skin on. Add apples into a pot of water and boil over medium-high heat. Once apples get a little tender add in Oats and boil for about 5mins. Reduce heat to medium-low add in milk , brown sugar, and cinnamon. Stir well let simmer for about 3mins then add in blueberries. Turn off stove stir all together and Enjoy!
