Yesterday it was super cold outside and Mondays for us are meatless Mondays, I decided to make a vegetable soup. Everyone loved it and it was a huge success with the kiddos. This is a super easy way to eat all family members to eat a lot of healthy veggies all at once. We ate ours with dutch bread on the side yummy : )

Ingredients:
*one large onion *Two tablespoons Extra Virgin Olive Oil
*Ground Ginger
*Ground Pepper
*Sea Salt
*bag of frozen mixed veggies
*two medium size sweet potatoes
*Small White Beans (cooked)
*Diced Tomatoes (28oz can)
*Minced garlic
*sliced white mushrooms (Dice them up small)
* Oregano
*Parsley Flakes
*Handful of chopped kale and Half a head of cabbage
First put olive oil in a large pot over medium-high heat and add chopped onions, peeled and chopped sweet potatoes, and mixed veggies. cook until onions are tender and veggies are thawed. Next add all seasoning (amount your liking) into the pot. Add diced tomatoes with juice and fill the tomato can with water twice and add that to the pot as well. bring to a light boil then add kale and cabbage. Cover and cook for about 30 to 40 minutes more then add beans and cook uncovered on medium-low heat for about 15 minutes more. Last Enjoy!
